Thank you for visiting our site to find out more about our company. We produce 'artisanal' cheese using local milk and traditional methods of production. Each batch produced is handmade and hand finished and laid to mature from 6 weeks to 12 months to develop some distinctive flavours. All cheeses are free of unnecessary chemicals, colourings or preservatives, and are vegetarian and gluten-free. We are based on the Westside of Mainland Shetland at the beautiful seaside village of Skeld, located in a former fish smokehouse. As well as being the centre of production, we also have an on-site shop and we usually stock a wide selection of our handmade cheeses - we'd be delighted to see you and give you a tasting of the products. We also stock some convenience items including milk, bread, sweets and ice creams. The shop is open during creamery hours which are usually mon-friday 9-5:00- although somedays we are open until later. We are also usually open at the weekends, when there is not a Farmers Market on. We also have a small cafe at the creamery serving filled rolls, cheese platters and refreshments. Whilst we will always do our best to explain details about the cheesemaking and show the production area through our viewing hatch, we also offer behind the scenes tours (by appointment - small fee applies) - where visitors will have the opportunity to learn more about cheesemaking, enter the production area and maturation room and see how we produce our cheese. The tour will take approximately an hour. Please ask for further details or call/email to book a visit. Our cheeses are currently available at Farmers Markets/Local Events and some local shops - see our stockists page for more details. We hope to be able to supply more retail/hospitality outlets in the very near future. We attend most markets including Tingwall, Unst and Vidlin each month and others as notified on this website or our Facebook page 'Shetland Cheese Ltd'. Our current range of cheeses include the following (although stock will vary from event to event): Sandstinger - a 'medium' cheese - slowly matured for 3 months in a cloth bandage to develop a complex flavour, coloured like a traditional Scottish cheddar Soothe Mooth - a young mild cheese with a slightly acidic open texture, similar to caerphilly - but we think with a bit more character Flavoured Truckles- sold either waxed (as an individual waxed portion of 180g Peerie or 400g Muckle) or in a vacuum packed portion - creamy mild cheese with flavours which include:
Shetland Wedgee - a creamy brie - sold as a wedge or whole individual cheese Monterey Mild - a firm mild cheese with a bit of a nutty edge to it - nice with a bit of chutney and great for cooking where it melts without any oil Reeky Jack - our first smoked cheese - a monterey jack smoked over oak for a full, smokey flavour - delicious!
