Behind Shetland Cheese Ltd are husband and wife team, Jay Hawkins and Dilys Evans. Dilys grew up on a dairy farm in mid-Wales before moving to London in the early 1990's to work in HR. Jay comes from London and is a chartered accountant who decided to swap cutting budgets, for cutting curds.
Dilys and Jay moved to Shetland in September 2008 with their two boys.
Jay has attended cheesemaking training at Reaseheath College in Nantwich, Cheshire and is a member of the Specialist Cheesemakers Association. We use local (pasteurised) milk making all our cheeses at Skeld Creamery, enjoying a new lease of life (previously Shetland Smokehouse).
We commenced production in late 2010 in our small vat - the 1000ltr ASTA vat came on-stream in Autumn 2011. We are rolling out supplies across local shops and hope to supply to Mainland UK by the Summer of 2012. If you are coming to Shetland - why not pay us a visit?
